This meal doesn’t take too long to prepare and is delicious! The chicken provides the body with lean protein. Garlic can help boost the immune system and contains many important nutrients including: Vitamins C and B6, and Manganese. Tomatoes (from the sauce in this recipe) help provide even more Vitamin C and Vitamin E. This definitely a meal your body and taste buds will enjoy!

*Ingredients (Serves 2):

  1. 8 oz. & 3 Tb Organic Chicken Broth (low sodium)

  2. ½ C Sweet or Red Onion (chopped)

  3. 2 Garlic Cloves (minced)

  4. 8 oz. Skinless Chicken Breast (visible fat removed)

  5. 2 ts Dried basil

  6. 1 ts Dried Oregano

  7. 8 oz. Can of Tomato Sauce (no salt added)

  8. 1-2 ts Agave

  9. ½ C Fresh Parsley (chopped)

  10. Sea salt

  11. Pepper

*Use fresh, organic ingredients whenever possible

Instructions:

In a medium sauce pan, place 3 Tb of chicken broth. Add onions and saute for 2-3 minutes. Add chicken and put on low heat. Cover and cook for 5 minutes. Turn over chicken, cover and cook for another 6 minutes. Then add garlic, broth, basil, oregano. Cover and let simmer for 15 minutes. Add the rest of the ingredients, simmer uncovered for 15 minutes. Remove chicken and shred then return it to the pan. Adjust flavor as needed. Enjoy!

**Can be served with a side of steamed broccoli or zucchini and 1 portion of Melba crackers.
