Ingredients (yields 6 servings)
1 ½ cup dried lentils
2 cup water
1 medium yellow onion, chopped
2 tsp. olive oil
2 garlic cloves, minced
1 tsp. ground cumin
1 tsp. ground turmeric
2 tsp. curry powder
2 tsp.(or to taste) sea salt
½ cup cilantro, chopped
3 cups organic chicken stock
2 medium organic carrots, chopped into small pieces
1 small red or yellow potato, chopped into small pieces
If you can, soak lentils 1 hour before preparing.
Rinse lentils and place in medium pot with 2 cups of water. After bringing to a boil, place heat on low and simmer for 20 minutes.
Meanwhile, in a medium saucepan add olive oil and onions. Saute for 2-3 minutes then add garlic and spices, adding a little bit of chicken stock if it gets dry, and mix well.
Add mixture and chicken stock to lentils as well as potatoes and carrots, if using.
Cover and simmer on low for 25-30 minutes or until lentils are done.
Add cilantro during the last 5 minutes of cooking. Serve and enjoy.
