Delicious, crunchy, nutritious–this salad is full of many worthwhile health benefits. With vitamins B, C, E, and K, the included spring mix greens adds protein to this recipe as does the nutritional yeast. In addition to these wonderful benefits, the sauerkraut gives this salad beneficial probiotics–with the seeds providing magnesium to this exquisite set of nutrients. Now, who can ask for a better combination?

Ingredients (yields 1 serving):

  1. 3 cups spring mix greens

  2. ½ cup sprouts, any kind

  3. ⅓ cup refrigerated sauerkraut *

  4. 2 Tbs. raw sunflower or pumpkin seeds

  5. 1 Tbs. nutritional yeast

Dressing:

  1. 2 Tbs. extra virgin olive oil

  2. 2 Tbsp. hemp or flax oil

  3. ¼ cup apple cider vinegar

  4. ¼ cup water

  5. 2 tsp. fresh ginger, minced

  6. ¼ cup unpasteurized miso *

  7. 1 Tbs. Nama Shoyu

  8. 1 pinch of black pepper

Directions:

Place all salad ingredients, except the nutritional yeast, in a bowl. Blend all dressing ingredients together in blender until smooth. Add dressing to taste in bowl of salad and sprinkle nutritional yeast last.
