Here’s another salad recipe that is tasty as well as healthy! What in particular makes this recipe healthy is the kale, green cabbage and brussel sprouts. Kale contains protein, fiber, folate, Vitamins A, C, K and Alpha-linolenic acid.

Green cabbage is a great source of anthocyanins that help with mental function and concentration. It also contains a high amount of Vitamin C and sulfur which helps remove toxins and uric acid.

Brussel sprouts are a great source of glucosinolate. This has been shown to help fight and prevent cancer. Although brussel sprouts aren’t hugely popular, this is just another great reason to include them!

Ingredients:

  1. 1 cup broccoli slaw

  2. 2 cups green cabbage, shredded or thinly sliced

  3. 2 cups kale, chopped

  4. 6-8 brussel sprouts, toughs removed, thinly sliced

  5. ½ cup dry cranberries

  6. ⅓ cup raw pumpkin seeds

Instructions:

  1. In a big bowl, place all ingredients except pumpkin seeds.

  2. Add ⅓ cup of the dressing (see below) and with clean hands mix gently so the ingredients soften a little.

  3. Add the pumpkin seeds and more dressing to your taste and enjoy.

Dressing:

  1. 1 cup extra virgin olive oil

  2. ½ cup raw honey

  3. ½ cup raw apple cider vinegar

  4. 1 Tbs. yellow mustard

  5. ½ cup red onion, chopped

  6. 1 tsp. sea salt

  7. Place all ingredients in a blender and process until emulsified. Keep in fridge.
