Zesty Greek Dressing

This salad dressing is zesty with a hint of sweetness. It makes a great marinade for poultry or fish. The secret to making this dressing creamy without lots of fat, sugar or calories is the tofu. It’s amazing the things you can make with tofu and this dressing is no exception. Be sure to use within 4 days for best flavor. We hope you enjoy!

Recipe highlights:

Ingredients:

  1. ½ tbs lemon juice

  2. 2 tbsp. Dijon mustard

  3. 4 oz. extra firm tofu (organic and non-GMO)

  4. ½ tsp. Garlic powder

  5. 2 tbsp. Red onion

  6. 2 packets stevia

  7. ¼ cup apple cider vinegar (raw, with live cultures)

  8. 1 tsp. Dried dill

  9. ½ tsp. Salt

  10. ½ tsp. Dried oregano

  11. ½ tsp. Parsley

  12. 1.4 tsp. Black pepper

Directions:

Place all ingredients in a blender and blend until smooth
