Banana Oat Muffins

This recipe is a crowd pleaser and a great grab-and-go snack! These muffins are a favorite of my kids and I feel good giving them this snack that is made with wholesome ingredients. The chocolate chips are optional, but if you choose to use them we recommend the brand “Life Joy”  because they are soy free. Give it a try and let us know what you think!

Ingredients (makes 12)

  1. 1 cup whole wheat flour

  2. ½ cup oats

  3. ¼ tsp salt

  4. 1 tsp baking soda

  5. 1 tsp cinnamon

  6. 3 very ripe bananas, mashed

  7. 1 TBS unsweetened almond milk

  8. 1 large egg

  9. ¼ cup agave

  10. 1 TBS pure vanilla

  11. ⅓ cup plain greek yogurt

  12. 3 tbs coconut oil, melted

  13. ⅓ cup chopped walnuts

  14. ½ cup dark or semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350.

  2. While oven preheats, spray a muffin tin with non-stick spray.

  3. Combine the flour, oats, salt, cinnamon and baking soda in a large mixing bowl.  

  4. In another bowl combine the bananas, almond milk, egg, agave, vanilla, yogurt and coconut oil.  Pour the mixture in the large bowl with the flour.

  5. Stir in the chocolate chips and walnuts.

  6. Divide the batter into the muffin tin.

  7. Bake for 20-25 minutes, until the center is set.
