Ingredients (yields 3-5 servings)

  1. 1 can low sodium black beans, drained

  2. ½ cup red onion, finely chopped

  3. 1 medium roma tomato, chopped

  4. 3 Tbs. cilantro, chopped

  5. ¼ cup fresh lemon juice

  6. salt to taste

  7. black pepper to taste

  8. 1 avocado, chopped

Directions:

Place onions, tomatoes, cilantro, lemon juice, salt, and pepper in a small serving bowl. Mix well then add black beans. If using avocado add them after the beans and mix again. Serve and enjoy.
