Chia Pudding with Berries

Chia pudding

This recipe is a light and healthy dessert that is bursting with health benefits. If you have been curious to try chia seeds, this is the perfect introduction. These tiny seeds are full of antioxidants, fiber, omega 3 fatty acids, help with bone health, aid in digestion, and help detoxify the body (to only name a few). This recipe does require a bit of planning since the chia seeds are what will thicken and set the pudding, but the results and health benefits are will worth it!

Ingredients: (Serves 6)

  1. 1 cup cashews, soaked for 2 hrs or overnight

  2. 2 cups filtered water

  3. ½ cup agave or pure maple syrup

  4. 2 tsp. Cinnamon

  5. 1 tsp. Pure vanilla extract

  6. Pinch of sea salt

  7. ½ cup chia seeds

  8. Fresh berries for topping, optional

Directions:

  1. Blend all ingredients except chia seeds, and berries. Process until smooth and creamy.

  2. Place chia seeds in a medium bowl. Add 1 cup of the cashew mixture and whisk gently.

  3. Continue adding the rest of the mixture from the blender to the bowl. Stir until well combined.

  4. Cover bowl with plastic wrap or lid and place in fridge for at least 3 hours or overnight to allow pudding to set. Enjoy as is or top with fresh berries.
