French Toast Casserole

Sometimes you just want to make a special breakfast without serving anything too sweet or rich. This baked french toast has been recreated as a healthier version, making it something you can feel good about serving to your family. This recipe can be prepped ahead of time the night before and popped in the oven the next morning to save you time. We hope you enjoy!

Ingredients:

  1. 6 cups cubed whole wheat bread, crusts cut off

  2. 1.5 cups unsweetened cashew milk (or almond milk)

  3. 8 egg whites, organic (or 4 whole eggs)

  4. ¼ cup pure maple syrup

  5. 2 tsp. Vanilla

  6. 2 tsp. Cinnamon

  7. 2 cups fresh or frozen mixed berries

Directions:

  1. Spray a 9 X 13 casserole dish with coconut oil spray. Add the cubed bread to the pan, making sure it’s spread evenly.

  2. In a large bowl whisk together the milk, eggs, syrup, vanilla and cinnamon. Pour mixture over the bread.

  3. Place dish in the fridge for 2 hours-overnight, stirring a couple of times to make sure none of the bread gets dry. You will know it’s ready when the liquid is absorbed by the bread.

  4. Top casserole with the berries. Bake at 350 degrees F for 40-50 minutes.
