This breakfast smoothie is packed with 14 grams of protein and healthy greens. This smoothie has quickly become a family favorite and tastes similar to an orange creamsicle. If you haven’t tried making a smoothie with tofu you will be pleasantly surprised. The tofu adds creaminess to the smoothie and gives it a healthy serving of protein. This recipe can be used for breakfast for the diabetes or weight loss program. This is not a snack smoothie. If you have this smoothie for breakfast you may also have a snack smoothie later in the day.

Ingredients: (Makes 1 large smoothie)
1 medium orange
1-2 tsp. Orange zest
8 oz. unsweetened soy milk (non-GMO)
4 oz. silken tofu (frozen and non-GMO)
1 tsp. Vanilla extract
3 packets Stevia
1 cup spinach or kale
Directions:
Using a high speed blender, process greens with the milk until smooth.
Add remaining ingredients and process until smooth.
Tips:
Be sure to use silken tofu- it has more water and will produce a creamier and more delicate flavor.
We like to buy 1 sixteen ounce package of tofu and stick it in the freezer for 1-2 hours until it firms up a bit, then divide into 4 servings. Put each serving in an individual bag and put back in the freezer. This way your tofu will be ready for 4 days worth of smoothies.
You can still make this smoothie without freezing the tofu, however it will be thinner. Try adding a few ice cubes to make it cold and thicken it up.
