Green Protein Pancakes

This recipe comes together quickly and is a great way to start your day. The pancakes get their green color from spinach, but you can’t taste it. It’s a great way to get more greens in your diet. 

*This recipe is to be used AFTER the metabolic or diabetes protocol. This recipe can be used during all other protocols.

Recipe Highlights:

  2. Great source of protein

  3. Full of vitamins and minerals

Ingredients: (makes 2 servings)

  1. ¾ cup organic cottage cheese

  2. 2 eggs, organic

  3. 2 cups baby spinach

  4. 1 cup oat flour (see tips for instructions on making your own)

  5. 1 tsp. vanilla extract

  6. 2 packets stevia

  7. 1 tsp. ground cinnamon

  8. ⅓ cup unsweetened almond or cashew milk


  1. Place cottage cheese, eggs, spinach and milk in blender. Process until all spinach is well blended. 

  2. Add oat flour, vanilla, stevia and cinnamon in blender and process until mixed well. 

  3. Heat a pan or skillet over medium low heat. (You can also spray with coconut oil or olive oil spray to prevent sticking)

  4. Pour batter on hot griddle or pan to form pancakes of desired size.

  5. Flip when bubbles start to form and cook an additional 2-3 minutes.

  6. Enjoy pancakes with desired toppings such as fresh fruit, pure maple syrup, natural peanut butter or berry sauce. 


  1. To make your own oat flour, add old fashioned oats to blender and process until a flour forms.

  2. To keep this healthy make sure that you watch your portions of toppings that you add to your pancakes. 

  3. These also freeze well if you want to make them ahead of time to be used during busy mornings.
