Recipe Highlights:

  1. 3 egg whites, organic

  2. 1-2 cups chopped pepper, mushrooms, onions and spinach

  3. Salt and pepper to taste


  1. Spray a small pan with a small amount of coconut oil spray. Heat over medium heat.

  2. Add veggies and cook until soft. Remove from pan and set aside.

  3. Spray pan again and return to heat. Add egg whites to warm pan. Season with salt and pepper.

  4. Cover with foil or lid and cook for a few minutes and flip. Cook until eggs are set.

  5. Fill with veggies and enjoy with 2 permitted crackers for a complete meal.
