Yummy Pink Smoothie

There’s something refreshing about the color pink.  The same is also true about this smoothie recipe.  It has a refreshing flavor and some great revitalizing health benefits to it.  In addition to being a great weight maintenance snack, this powerful smoothie packs some great nutritional benefits due to the raw ingredients, such as the carrots, beets, dates and sunflower seeds.

The micronutrients in this smoothie are good for anyone seeking to maintain their health, but are particularly helpful for individuals that are battling cancer.  The sunflower seeds provide a lot of enzymes while the carrots and beets have a high concentration of beta carotene, an important nutrient that helps combat free radicals.  Lastly this smoothie helps oxygenate the blood.  With all of the health benefits, don’t get confused – this pink smoothie really is yummy!

Ingredients (1 – 2 servings):

  1. 12 oz, coconut water (do not use coconut milk)

  2. 1 large carrot, peeled and cut

  3. 1/4 of a raw medium sized beet

  4. 1/4 cup, raw sunflower seeds (soak overnight and drain)

  5. 2 – 3 pitted dates

  6. 1 teaspoon, flax oil

  7. 12 frozen strawberries

Instructions:

Blend coconut water, carrot, beet, sunflower seeds and dates until smooth. Add flax oil and frozen strawberries and blend again for 25 seconds. Enjoy!
