Huevos Rancheros

Recipe highlights:

  1. Great source of protein

  2. Good source of fiber


  1. 3 egg whites, organic

  2. Salt and pepper to taste

  3. ¼ cup black beans, cooked. (If from can, rinse them)

  4. 2 tbsp. Salsa


  1. Spray a small pan with a small amount of coconut oil spray. Heat over medium heat.

  2. Add egg whites and salt and pepper to warm pan and until eggs are cooked through. scramble.

  3. Top with beans and salsa.

  4. Enjoy with 1 permitted cracker for a complete meal
