This powerhouse smoothie is filled with nutrient dense carrots, beets and strawberries. Ingredients (yields 2-3 servings)
1 carton coconut water (11.1 oz.)
1 large carrot, peeled and cut into chunks
⅓ of a beet, peeled and cut into chunks
¼ cup raw almonds
Juice of ½ a lime
½ tsp pure vanilla extract
2 packets stevia
8 frozen strawberries
Directions:
Place all ingredients, except strawberries in blender. Process until smooth.
Add strawberries and process again until smooth.
Divide into 2-3 cups and enjoy.
Tips:
Be sure to use a powerful blender. We like Blendtec or Vitamix. You should not have any chunks in your smoothie.
I like to make a couple “smoothie packets” ahead of time and keep them in my fridge until ready to use that week. I divide the cut up beets, carrots and almonds for the week and put them in individual bags, that way when I’m ready to have a smoothie, I just dump and blend. It makes it easy to make sure that I get my nutrient dense smoothie every day no matter how busy I get.
